On an enthusiast vehicle the history is a large part of the value. Who did what, which parts are fitted, what is original and what was replaced — that documentation is what separates a project from an object.
Attach photographs to every entry. Pictures taken while the work is open cannot be recreated afterwards.
Note which carburettor, which oil, which tyre size and which part number is fitted. In ten years you will not remember.
